I just installed the BLTouch today. I was trying to get it calibrated, and found that I do not have the Z-Offset setting on my printer.
Anyone have any idea why this setting would be hiding from me?

I have the same problem and Yes I did install the bl touch firmware after installing the bl touch.
Same case here. No option to Z Offset in the Control Motion Menu.
Just got my BL Touch today (6002010003). Installed and flashed firmware (Marlin2.0.1 BLtouch V1.1.2 without transfer board - Ender-3 Pro- Marlin2.0.1 - V1.1.2 - BLTouch.bin).
Creality Ender 3 Pro 4.2.2 board.
Same here, new Bl Touch with one single plug, new board 4.2.7 and NO Z negative adjustment. Tried different Versions of software and still same issues.
I believe it is the firmware bug. I help this video can help you a bit. I will make a post if the Crealtiy team has a solution.
So I found this the other night. The firmware has been updated and the setting we’ve been looking for has been removed.
The setting you want to find is here:
Control>Bed Leveling>Probe Z Offset.
This setting will move your Z axis. So do you normal leveling while adjusting this. When you’ve found the right level, be sure to store the settings so you don’t have to adjust each print.
